not 100% sure of the value of having the submodule but presumably if we are keeping the submodule in the repository we should update that too

Symptom
We were way out of date on JoltPhysics.js. This was particularly a problem because we need certain methods on
OrientedBoxes which are only provided by the newest version.Solution
v0.31.2 -> v1.0.3

All tests pass.
