Updates bincode from 1.3.3 to 2.0.1

Either upgrade rustc or select compatible dependency versions with

Caused by:
  feature `edition2024` is required

If all you are using is the Evr / Nevra stuff, I've now split that off into an independent crate with no required dependencies and no strict bound on the MSRV

Granted, it looks like I did still set edition = "2024", but I could probably relax that - though I would hope that an edition 2024 base should be OK by now.

(Regardless, it's a much more lightweight dependency)
