Jailbreak docker fix

Description

In the current version of the jailbreak detection server dockerfiles, the WORKDIR is set to /models, but the entrypoint assumes we are in /app.

Relocate the download to /models to the top of the file and make the entrypoint /app/server.py to be explicit.
