Refactor CloudWatch Dashboard Metrics Configuration

- Removed redundant metrics for API, batch, and ancillary Lambdas from the CloudWatch dashboard configuration.
- Cleaned up DynamoDB and Kinesis metrics definitions to streamline the code.
- Updated SQS queue metrics handling to improve clarity and maintainability.
