Expand tech stack and companies galleries

Add nvim, tmux, byobu, QEMU, Arch, Gentoo, qutebrowser, Google, Azure,
Hetzner, Microsoft 365, RingCentral, Clio, Autotask, Kaseya, NinjaOne,
Datto RMM, and Asset Panda to the tech stack collage. Add Amourgis &
Associates, DreeBot, and Violet Knight to the companies gallery, and
swap the Hyland entry for the OnBase-by-Hyland product logo per
correction. Also switch the Projects sort to purely most-recently-
updated instead of stars-first.
