When converting images, it would be nice if we can edit normal image saving features like resolution, transparency, compression level.

Agreed, for video as well, it would be nice to have options. I know when it comes to ffmpeg, you can define environment variables to add extra arguments globally, but since the user's needs are likely to change from one file to the next, it would be better to have options at conversion time instead.

The flow I picture would be to
select source file > select target format and converter > converter menu pops up with defaults loaded, allowing you to tweak its settings > convert.
